I think some people do it just because it's trendy (and can help insulate them for criticism), but for others I 100% agree it's about applying personal traits to a character they like to better identify with them, especially if it's something that doesn't get as much/any coverage in official canon. Sonic and Knuckles are two of my favorite game characters and I think part of the reason I ship them is so I can better relate to them. Obviously Sega will (stupidly) never make it canon (even if it works better than Sonadow and Sonamy!), but I do wonder if I'd have ended up shipping them if Sega had made Silver canonically gay.

Personally I find the top scars kinda dumb, especially since IRL it can be done with keyhole surgery, especially if they beef up their pecs first. I can't really complain though when there's so much more art of Sonic pregnant or morbidly obese
