It is of my opinion that Sonic and Sally became a very touching couple in Ian's run, they both went and moved on from their previous issues, and started over. If we were to go towards something like 25 years later, Sally would eventually hold herself... and Sonic, to a different standard. And so his personality would not be compatible with her. Sonic would also not be compatible at all especially since he's a very energetic, magical hedgehog that runs past the speed of sound , and he would be forced to have a glorified office job for the rest of his life. At the very least, his life would always be boring, and he would be under scrutiny by his wife and others for not acting like royalty.

With that out of the way, I actually wouldn't mind SonAmy, and I think they could be a great couple if they were GIVEN THE OPPORTUNITY to have some decent and healthy chemistry between the two. Amy's personality technically would be better for Sonic anyway. Sally is tied by duty and the will to lead. She's kind of a mess. The aging-up with the Magic ring both messes with your head on how old/mature she's supposed to be and makes her come off as extremely selfish for doing something so personal with a magic artifact. You'd also think something interesting would come out of her literally being Mercian royalty, but nothing ever does. And also Sonic refusing her at every turn because "he's not into being in a relationship" doesn't work given his history with Sally.

So, could be worse, could be better, I don't think preboot-Amy was ideal.
