Wow, you're definitely missing out! SA1 and 2 are fantastic, even if people argue over which is better. They're a bit clunky now, mostly due to the camera, but are massively improved with mods.
Generations is probably the best recent game, and fans have modded heaps of fantastic levels. The Unleashed Project ported all the daytime stages to Generations and is a great way to play if you don't want to deal with the Werehog. All Stars Racing Transformed is also great. The other 3d games can be a lot of fun too, but I'd play these first since they're more accessible to new players.
Also, pic related was posted on /v/ and /sthg/ and is a great resource for getting the most out of the games.
